Aji Escabeche

I believe this pepper should be more orange, but the seed I have produces a beautiful 3" red pepper. As it dries, it wrinkles along the length as you can see in the photo. According to a friend who was in the Peace Corps, this variety is quite popular in Chile where it is generally pickled. I've dried it to make some fabulous red powder. The flavor is sweeter than most peppers, but plenty spicy.
