San Pedro Sweet

This is a relatively mild, thicker-walled chile with an indescribably sweet and spicy flavor. The seed for it was given to me by a neighbor when we first moved onto the farm in 1989. The pods are shorter than other chile, but wide and fluted at the top. It is wonderful dried, but can also be used fresh when green for chile rellenos and makes a spicy addition to salads when it matures to a deep red. If you want a versatile chile with all the flavor and a little heat, this is the one.
